Ingredients
1 pound penne pasta
1 head broccoli, cut into florets
4 cloves garlic, minced
4 anchovy fillets
1/4 cup olive oil
Salt and pepper, to taste
Parmesan cheese, grated, for serving
Instructions
Cook penne pasta according to package instructions.
Reserve 1 cup of pasta water and drain the rest.
While the pasta is cooking, heat olive oil in a large skillet over medium heat.
Add minced garlic and anchovy fillets, and stir until the anchovies dissolve.
Add broccoli florets to the skillet and sauté for about 5-7 minutes, until tender.
Add the reserved pasta water to the skillet and bring to a simmer.
Add cooked penne pasta to the skillet and stir to combine with the broccoli and anchovy sauce.
Season with salt and pepper to taste.
Serve hot with grated Parmesan cheese.
