1 pound chicken bones or beef bones
8 cups water
1 onion, chopped
2 stalks celery, chopped
2 carrots, chopped
1 bay leaf
Salt and pepper to taste
1 pound fresh tortellini
Fresh parsley, chopped
Directions
- In a large pot, add the chicken bones or beef bones and water. Bring to a boil over high heat.
Skim off any scum that rises to the surface, then reduce the heat to low and let simmer for 1 hour.
After an hour, remove the bones from the pot and discard.
Add the chopped onion, celery, carrots, and bay leaf to the pot. Let simmer for another 30 minutes.
Season the broth with salt and pepper to taste.
In a separate pot, cook the tortellini according to the package instructions.
Drain the tortellini and add them to the pot with the broth.
Serve hot, garnished with chopped fresh parsley.
