Penne with broccoli and anchovies
Ingredients
- 1 pound penne pasta
- 1 head broccoli, cut into florets
- 4 cloves garlic, minced
- 4 anchovy fillets
- 1/4 cup olive oil
- Salt and pepper, to taste
- Parmesan cheese, grated, for serving
Instructions
- Cook penne pasta according to package instructions.
- Reserve 1 cup of pasta water and drain the rest.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic and anchovy fillets, and stir until the anchovies dissolve.
- Add broccoli florets to the skillet and sauté for about 5-7 minutes, until tender.
- Add the reserved pasta water to the skillet and bring to a simmer.
- Add cooked penne pasta to the skillet and stir to combine with the broccoli and anchovy sauce.
- Season with salt and pepper to taste.
- Serve hot with grated Parmesan cheese.
