Ingredients

  • 1 pound spaghetti

  • 2 lobsters, cooked and meat removed

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1/4 teaspoon red pepper flakes

  • 1 pint cherry tomatoes, halved

  • 1/2 cup white wine

  • 1/2 cup chicken broth

  • Salt and pepper to taste

  • 1/4 cup chopped fresh parsley

Directions

  • Cook spaghetti according to package instructions, drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add garlic and red pepper flakes and sauté for 1-2 minutes until fragrant.
  • Add cherry tomatoes and cook for 5-7 minutes until they start to soften.
  • Add white wine and chicken broth and bring to a simmer.
  • Add lobster meat and stir to combine.
  • Add cooked spaghetti to the skillet and toss to combine with the sauce.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.
