Ingredients

  • 1 pound penne pasta

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 2 medium zucchinis, sliced

  • 1/2 cup white wine

  • 1 pound prawns, peeled and deveined

  • 1/4 teaspoon red pepper flakes

  • Salt and pepper, to taste

  • Fresh parsley, chopped, for garnish

Directions

  • Bring a large pot of salted water to a boil.
  • Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
  • While the pasta is cooking, heat the olive oil in a large pan over medium-high heat.
  • Add the garlic and sauté until fragrant, about 1 minute.
  • Add the zucchini slices to the pan and cook until they begin to soften and brown, about 5-7 minutes.
  • Pour in the white wine and let it simmer for 2-3 minutes.
  • Add the prawns to the pan and cook until they turn pink, about 2-3 minutes.
  • Add the red pepper flakes, salt, and pepper to taste.
  • Add the cooked penne pasta to the pan and toss everything together until well combined.
  • Garnish with chopped fresh parsley and serve hot.
